One of my favourite things to do is to revive leftovers. It’s a lot easier if you’re working with something basic, particularly a starch like rice. One of the ways I like to jazz up some rice is to turn it into burrito fixings.
Whether it’s Basmati or some long grain wild rice or brown rice, simply chuck in a can of beans (refried, black, kidney… a bean blend – whatever you have on hand) and some tomato paste and canned tomatoes.
I also like to add a packet of vegetarian “ground beef” (my fave being Yves’s Veggie Ground Round). Simply heat it all up, stir to avoid sticking, and serve in a tortilla with a bit of lettuce, grated cheese, and salsa.
By cooking a little extra with one meal, you end up with another easy-to-make meal the next day.
