Banana Butterscotch Pecan Muffin Recipe. Yeah.

I gussied up a recipe that is an old favourite (banana choc chip muffins) with butterscotch chips and crushed pecans. It’s as good as it sounds, if not better…

Ingredients

  • 1 1/2 cups unbleached all purpose flour
  • 1/3 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • pinch of salt
  • 1 x large egg
  • 3 ripe bananas (mashed)
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup milk
  • 1 tsp vanilla essence
  • 1/2 cup butterscotch chips
  • 1/4 cup crushed pecan nuts

Method:

Butterscotch Banana Pecan Muffins

 

Preheat oven to 180°C/350ºF. Line a muffin tray with muffin cups/liners.

In a large bowl, mix flour, sugar, baking powder, baking soda, salt and cinnamon. In a separate bowl, mix the mashed bananas, egg, melted butter, vanilla, and milk together. Stir the banana mix into the flour mix, stirring well to avoid lumps of flour. Stir in the pecan nuts and butterscotch chips. 

Divide up the mixture into the muffin cups and bake until the tops are golden (about 20 mins, depending on your oven).
